In addition to her parents, Elizabeth was preceded in death by her sister, Bonnie Eckerson.

Elizabeth leaves behind a legacy of love and devotion. She is survived by her loving spouse of 27 years, Larry Knight of Dahlonega, and her children; Wesley Knight, Troy (Betty) Knight, Heather Abernathy, and Erica (Barry) Shinn; siblings Barbara Parker, Donald (Gail) Anderson, Roger Anderson, Sherrie Turner Head, Jeanette (Kenneth) Brown, and Anette Stringer; grandchildren Taylor Knight, Triston Knight, Isaiah Knight, Grayson Knight, and Gaige Crawford; and her great-grandchildren Christopher Knight, Angel Knight, and Tucker Snead. Elizabeth’s life was rich with simple joys and profound connections. She found joy and peace in the ocean’s embrace and delighted in preparing meals, especially her loved ones’ favorite cakes. Her father’s truck held a special place in her heart, a tangible link to cherished memories. However, above all, Elizabeth cherished her family, finding unmatched joy in her grandchildren and great-grandchildren. Grayson’s recent graduation from Basic Training filled her with great pride, a testament to her support and love. In addition, Elizabeth found joy in community gatherings, particularly car shows and motorcycle rides. Though known for her stubbornness, she possessed a heart of kindness and selflessness, leaving a mark on all who knew her.
